Kentucky Derby Cake. For the first time in 75 years, the most exciting 2 minutes in Sports won’t be contested the first Saturday in May. We’re still celebrating! 95% of all Bourbon is produced in Kentucky and we thought we’d celebrate this beautiful state and our love for horses with this moist, buttery, nutty creation pronounced with the popular whiskey. And what says Kentucky Derby more than an adornment of roses? We’re taking you into the winner’s circle! Might we suggest a nice, bright Bourbon cocktail like a Libertine to go with your slice? 🌹🏇
Ingredients:
2 3/4 cups flour
1 cup butter, room temperature
3 tbsp Crisco Golden
1 cup whole milk + 1 tbsp lemon juice, let sit 1 hour room temperature
3/4 cup organic raw sugar
4 eggs, room temperature
1/3 cup Bourbon (Woodford Reserve, official Kentucky Derby sponsor)
1/2 cup pecans, toasted
1/4 cup maple syrup
2 tsp vanilla extract
1 tsp baking powder
1 tsp sea salt
1/2 tsp baking soda
Bourbon Pecan Icing:
2 cups icing sugar
3 tbsps Bourbon
1/4 cup half & half
1/4 cup pecans, toasted
Instructions:
1. Preheat oven at 350°F.
2. In large mixing bowl, cream butter, sugar and Crisco.
3. In separate bowl, combine flour, salt, baking powder and baking soda.
4. In small bowl, mix milk, Bourbon and vanilla.
5. Combine flour into butter bit by bit, beating with handmixer.
6. Add milk mixture and beat till smooth.
7. Fold-in pecans with spatula.
8. Grease Bundt pan and dust with flour, tapping-out excess flour.
9. Pour batter into pan, levelling with spatula.
10. Place in oven, baking 45 minutes or till toothpick comes out clean.
11. Cool cake 20 minutes, using spatula around edges to loosen it from pan. Flip cake over onto a platter.
12. Cool 1 hour.
13. Prepare icing by mixing icing sugar, Bourbon and cream by hand. Icing shouldn’t be too thick nor too thin.
14. Use a spoon and drape icing over cake. Sprinkle toasted pecans over top of cake evenly.
15. Stand 1 hour before serving. Garnish hollow of cake with roses.

2020 has been awful challenging. Believe me, our hearts are with the Horse Racing community right now with racing cancelled or postponed both sides of the border, with a select few racetracks continuing operations with access restricted to the public. With the 2020 season postponed indefinitely at Woodbine Racetrack, we are glad that safety of the community is being placed first on the backstretch. At the same time, we worry for our friends whose livelihoods depended on that initial April 18, 2020 start date and also the concerned owners who have to wait even longer for a return on investment from their stock. We know for certain this period of isolation amidst COVID-19 worries, will continue into the Summer and our racing season’s marquee event the Queen’s Plate, accordingly has followed suit in its postponement.
Despite all this, we have our health and safety to treasure and I wouldn’t choose to be anywhere else than Canada where at a provincial and federal level, the situation has been handled in an exemplary manner. The 2020 racing season will commence at some point and those fruits of labour also will come. Sending all my support and encouragement that while times are harrowing and tough right now, we are all in this for the long haul and we are not alone in our losses. While setbacks are temporary, resilience will prevail in the end. Let’s not obsess about things that weigh-down our spirits, but instead do all we can do to help us all get back to business as soon and safe as possible. Know at the end of the day those fans will be there to cheer the community on at the end of the tunnel when time allows.
That being said, we were so excited to see Mr Will return to training last month after nursing a minor injury over the winter. The time away looks to be paying off. His Owner/Trainer Michelle Love reports to us after outfinishing his workmate under exercise rider Nikki Alderson, “Our boy came out of his workout better then ever!! He thinks he’s a racehorse now. All business.”. That brings me joy and he just returned home again for some rest with the delayed start of the racing season. His much anticipated debut will come before we know it and we know it will be so worth it!

Mr Will also was paired again with Jayne Smith, who always gives him that extra bit of loving care.
…and of course a new Snuggle Buddy for our little champ! He loves his plushies.
Did I tell you how Mr Will and Princess (A Pic by Mrwill) finally met? I was overjoyed seeing them together at last! Mr Will and some of the babies from Love’s stable were brought to the facility where Princess is boarded for some schooling earlier this year. They hit it off just great!
Princess continues to thrive in her life of retirement. Her Mom Emily Fisher (second photo, above) has done a fantastic job nursing her back to wellness and socializing her with her new family. Princess always has been a special filly, perhaps getting along better with humans than horses. You might recall she almost lost her life as a baby, getting nursed back to health by caretakers and of course our constant pampering made her lose sight of who she really is. She’s adjusted beautifully, enjoying her time outdoors in the company of her family.

In the attempt to find meaning in her life, Jan (Toni Collette), breeds a racehorse in her tiny Welsh town and enters him in once race after another.
This is a hilarious and heart-warming underdog story filled with quintessential British humour. Although the story is quite conventional it’s the way Horse Racing is presented and the brilliant performance from Collette that separates it from the rest. Overall, Director Euros Lyn brings Jan’s true story to the screen in an entertaining and heartfelt way.

True to tradition, we present to you our A YEAR IN HORSES 2018 Video. Annually at the end of the Woodbine racing season, we compile our favourite moments of people and horses at the races to commemorate the year.
This year we chose to pair our highlights with one of our favourite tracks, ONE KISS by Calvin Harris and Dua Lipa. The song is a celebration of falling in love and that is exactly what we do year after year. We never get sick of this, our favourite sport! It’s always been about the people, the passion and the horses for us rather than hitting a Jackpot Hi-5.
The year was marked by Wonder Gadot‘s reign as the Queen of Canadian Racing and veterans shining like Pink Lloyd, Pumpkin Rumble, Mr. Havercamp, Kingsport and Tiz a Slam. We saw also the rise of several recent additions to the jockey colony like Jerome Lermyte and Kazushi Kimura. 2018 may have been a divisive year with many getting their moment to shine and split opinions, but there certainly were a lot of memories to capture. We take you right from the start of the season, all the way to Churchill Downs at the Breeders’ Cup, right to the end of the Woodbine meet.
While we had to scale back our visits slightly this year due to various commitments and Billy’s health issues – he is the only thing that could keep us from the races – we still were very much there throughout the year. Hence when people ask me “Where have you been?”, honestly I never left! And here’s the proof.

We had so much fun at our first ever Breeders’ Cup last year that we had do it all again! With over 118k people in attendance for Horse Racing’s two championship days Friday, November 4 and Saturday, November 5 at Arcadia’s Santa Anita Park – about an hour outside Los Angeles – it was a spectacle spilling over in starpower. Spread over a series of ten races, the extravaganza of the finest in Horse Racing, drew fans and talent from all around the world. If there was any question about the sport’s popularity, the 2016 Breeders’ Cup ranks overall as the fourth-most-bet edition of all time since its inception in 1984 with $159.9 million wagered.
The $6-million Breeders’ Cup Classic was the centerpiece of the weekend, contested on Saturday. Seen widely as 2014 North American Horse of the Year and fan favourite CALIFORNIA CHROME‘s crowning moment in a flawless 2016 campaign, it just simply wasn’t meant to be. The Cinderella-storied five-year-old led all the way looking to pull away under a confident ride from Victor Espinoza, only to be caught late by brilliant three-year-old colt and second choice, ARROGATE. The winner is owned by Juddmonte Farms and trained by the legendary Bob Baffert, who won the important race last year with wonderhorse AMERICAN PHAROAH.
Headlining Friday was the $2 million Breeders’ Cup Distaff starring three of the sport’s queens, all whom have in previous years won a Breeders’ Cup race en route to being named champion with a coveted Eclipse award. Still very much on-top, Spendthrift Farm’s six-year-old mare BEHOLDER, making her final start, took her earnings past the $6 million-mark with her third Breeders’ Cup victory. This very likely will culminate in a rare fourth championship title for the Richard Mandella trainee when awards are handed-out January 2017. Under Gary Stevens, BEHOLDER faced stiff competition from the undefeated and impending three-year-old filly champion SONGBIRD, battling to the end in an exhilarating head-bobbing finish, never to be forgotten. Reigning champion three-year-old filly STELLAR WIND had a poor start and was never in contention despite defeating BEHOLDER in their last match, the Zenyatta Stakes.
Stars of the human variety also were in attendance including Breeders’ Cup Ambassadors BOBBY FLAY and ELIZABETH BANKS in a dramatic mesh, face-covering fascinator, watching the Breeders’ Cup Classic from the rail with her family. Taylor Lautner, Maika Monroe, Emily Ratajkowski and Allison Janney also were among several others spotted.
As Canadians, we had plenty to be proud of. Woodbine Racetrack stars CHANNEL MAKER, NOHOLDINGBACK BEAR, MELMICH and CALGARY CAT ventured to California after accomplished campaigns this season locally, the latter two running a decent fourth in the Marathon and Breeders’ Cup Turf Sprint respectively under jockey Luis Contreras, who came with his father and brother. Ontario-bred WAVELL AVENUE who was defending her Breeders’ Cup Filly & Mare Sprint title finished a close second in the race this year. Vancouver’s Mario Gutierrez who got his break at Hastings Park, won the Breeders’ Cup Juvenile Fillies with longshot CHAMPAGNE ROOM.
We may be seeing less of Woodbine Trainer Brian Lynch these days but Amerman Racing Stables’ OSCAR PERFORMANCE won the Breeders’ Cup Juvenile Turf under his preparation. Our friends at Team Mark Casse thrilled us with runner-up finishes with turf champion TEPIN in the Breeders’ Cup Turf Mile after winning it last year, and promising Stonestreet Stables filly VALADORNA was a bang-up second in the Juvenile Fillies – she will be a force to be reckoned with next year. CLASSIC EMPIRE gave Mark Casse and owner John C. Oxley their first ever Breeders’ Cup Juvenile winner and he very well could be in the Kentucky Derby that first Saturday in May 2017 as the favourite.

We were ecstatic to see his star filly ENOLA GRAY at his barn. Perhaps she will be at Del Mar next fall for Breeders’ Cup 2017?
Breeders’ Cup Turf Mile winner TOURIST under Joel Rosario, with assistant and son to Bill Mott, Riley who has visited Woodbine much this year. Turf queen and defending champion TEPIN was flying late to be second. We were thrilled we got to see the stellar MISS TEMPLE CITY who has two Grade I wins against the boys this season for Trainer Graham Motion.
Breeders’ Cup Filly & Mare Turf winner QUEEN’S TRUST under charismatic celebrity jockey Frankie Dettori and fan favourite and Breeders’ Cup winner herself LADY ELI, a heartbreaking second. It is a treat to see Japanese/French-speaking jockey Yutaka Take as he rode Asian import, NUOVO RECORD.
Breeders’ Cup Turf Classic winner HIGHLAND REEL took it wire-to-wire under a daring ride by Irish rider Seamus Heffernan. Great runs also from a now-retired Hong Kong Vase winner FLINTSHIRE and defending heroine of the race FOUND, who recently won the prestigious Arc de Triomphe in France.

Yesterday we sent-off a Legend. Known as “The Voice of Woodbine” for the past 29 years, Race Announcer Dan Loiselle now is officially retired after calling his final race yesterday, the Lady Angela Stakes at the Toronto Racecourse.
As a huge Racing Fan, this comes with mixed emotions. Sure, we are happy to see him get a well-deserved break at last but more for selfish reasons, we are sad to see him go. Since childhood and as long as I remember going to Woodbine Racetrack, Loiselle‘s voice became synoymous with the thrill of a stretch drive, distancing the Winner that much further from the Runners-up. It could have been a Photo Finish, but Loiselle had you believing the Winner won by a mile. Each Race Call had its own individual story and he never was short on ideas to tell them smartly. Fans partly were cheering for the horses and jockeys, but few could deny that the excitement of a race finish at Woodbine was heightened considerably by Loiselle‘s exhilarating narrative. The tremor in his Baritone, the perspective and heart of a true Racing Fan. He told each Race as a Fan would see it, but a level of dexterity and accuracy no other Fan ever could.
Upon running into Loiselle this past Winter at an Open House event which he hosted, I semi-jokingly expressed my disapproval of his then-forthcoming retirement, crying “How dare you retire on me Dan!?”. He gave back an appreciative expression, but I knew at that point he was beyond a doubt certain of his decision and there wouldn’t be any reconsideration. Trust me, we’ve seen many false retirements in the Sport.
It brings me a great sense of pride to know that Loiselle considers me a Friend and upon exchanging hugs before his final Race Call yesterday, he tells me, “Will Wong, you’re a great Friend to have!”.
I’m going to miss Dan Loiselle so much, but know he won’t be that far away. I wish his Wife Wendy Loiselle, also an Employee at Woodbine nothing but happiness in this next chapter of their lives. We also look forward greatly to the Race Calls of Robert Geller, who comes to Woodbine Saturday, June 13th, by way of Emerald Downs in Washington.

Being a huge Horse Racing Fan also, this Visit also will mark my first visit to historic Belmont Park and with excitement for the Sport reaching a high this week with the 140th edition of the Kentucky Derby to be held this Saturday, this couldn’t come at a better time!

Last year’s Budwiser Clydesdales Super Bowl TV Spot had me in tears and although I didn’t cry as hard this time, I still am a mess after seeing what they had to offer us this year. Many of you might remember the running Story in Budweiser‘s Super Bowl TV Ads. A Farmer raised an adorable Clydesdale Pony, but they Pony had to grow-up and achieve his destiny of being a Show Pony. One day their paths crossed again and well… I can’t even retell it without tearing up. Watch it here.

Although the 2014 Thoroughbred Meet at Woodbine Racetrack doesn’t begin for another three months, the Jockey Club of Canada earlier today announced its very best in Horse Racing in 2013. The Sovereign Awards, which honour Canadian Champions in the Sport, are set to take place on Friday, April 11, 2014.
With Finalists for coveted Horse of the Year yet to be determined, as they will be selected based on Winners that night, I must say it could be a contentious Battle! Forte dei Marmi was amazing for much of the Season and will be up against the hard-fighting Up With the Birds who did amazing against top-class Competition in the U.S. Ria Antonia, might not have been remarkable at Woodbine where she started her Career earlier last year, but she went-on to win the super-important Breeders’ Cup Juvenile Fillies Dirt in California, a Feat never accomplished before by a Canadian-based Filly.

Traditionally one of my favourite Race Days of the year, Woodbine Oaks Day showcases Canada’s finest three-year-old Fillies. The $500k Race this year pit together two of the Country’s best in years, Spring in the Air and Nipissing, both Division Leaders as two-year-old Fillies in 2012 – the former recently being crowned last year’s Champion at the Sovereign Awards. Ultimately though, it would be second choice Nipissing who was victorious, winning by 3/4 of a length over Spring in the Air, the post-time Favourite. The Winner won in a timely 1:50.3 for the nine-furlong Fixture, paying $7.10 to win on a $2 investment. Watch the Race here.
Nipissing’s Story however truly is one of legacy and love. She is a homebred Filly who races for Chiefswood Stables, trained by Rachel Halden and ridden by her Partner Steven Bahen. The Filly’s Father Niigon, in 2004 won the Queen’s Plate and there is much buzz surrounding her possibly making an appearance against the Boys in the 154th running of that $1-million Race at Woodbine Racetrack next month.

Not to steal the Ladies’ spotlight, the Plate Trial also was run earlier in the day at Woodbine, with highly-regarded Dynamic Sky winning by a tight nose under the guidance of red-hot Joel Rosario, edging-out the lightly-experienced His Race to Win. Winning in a time of 1:50.5, the Colt was just a click slower than eventual Woodbine Oaks Winner, Nipissing. He rewarded his Supporters with $8.60 to a $2 bet as the second choice. Although falling-off the ultra-tough Kentucky Derby Trail earlier in the year for Tycoon Owner John C. Oxley, Dynamic Sky appears to be peaking again right in time for the Queen’s Plate. He certainly won’t have it easy though as Plate Trial Runner-up His Race to Win is in fighting form and we mustn’t forget that one’s Sam-Son Farms Stablemate, Up With the Birds, who also looks ultra-sharp after a decisive five-length win in May 26th’s Marine Stakes at Woodbine. Watch that Race here.
In all, this is shaping-up to be the most competitive Queen’s Plate in years with the Male and Female Divisions well-represented in talent. Bettors will have their work cut-out for them in terms of sifting through the quality selection.
Earlier in the day, legendary Mickey Walls made a rare appearance to accept the Avelino Gomez Award, honouring Canadian Jockeys who have made significant contributions to the Sport of Thoroughbred Horse Racing. The 39-year-old Toronto Resident retired officially in 2003, but at the age of 17 went on to be crowned North America’s most Outstanding Apprentice Jockey in winning an Eclipse Award. Overcome with emotion, Walls held back his tears as several of his Peers and a new generation of Talent (including Model/Actress/Jockey Chantal Sutherland who recently came out of retirement), stood by his side as he accepted the Award on the E.P. Taylor Turf Course.
Racing Fans got a huge treat earlier in the day as Rosario made his way north of the Border after a third-place finish in the Belmont Stakes in New York yesterday aboard the outstanding Orb, who won this year’s Kentucky Derby. In addition to a win in the Plate Trial aboard Dynamic Sky and a runner-up finish aboard Spring in the Air in the Woodbine Oaks, Rosario graciously spent time with Fans signing Autographs and taking Photos earlier. He came ever-prepared with array of Sharpies, giving Fans a choice of colour as he placed his coveted Signature upon 8×10s of his recent Derby Victory.
We’ll definitely be at the Queen’s Plate on Sunday July 7, 2013 and look forward to it eagerly!
