With a shared vision of creating the neighbourhood’s go-to Italian restaurant, Charles Khabouth, Founder and CEO, and Danny Soberano, President of INK Entertainment, have brought Bar Romy to life as a welcoming destination centred around honest Italian cooking, great wine, an incredible cocktail program, and genuine hospitality.
Designed for after-work drinks, casual dinners, and gathering with friends, Bar Romy offers an inviting atmosphere where guests can settle in, return often, and always feel at home. “Bar Romy is exactly the kind of restaurant I’ve always wanted in the neighbourhood,” says Charles Khabouth. “It’s casual, friendly, upbeat, and built around great food, great wine, and genuine hospitality. We wanted to create a place where people feel comfortable dropping in any day of the week—whether for a quick bite before the theatre or a game, or for a celebratory dinner with friends. Leading the culinary program is INK Entertainment’s newly appointed Corporate Chef, Ben Heaton, whose philosophy centres on simple, honest interpretations of neighbourhood Italian cuisine made with exceptional ingredients. The menu celebrates familiar Italian classics prepared with restraint and care, featuring premium imported ingredients, handcrafted pastas from Toronto’s renowned Famiglia Baldassare, house-made focaccia, vibrant antipasti, and a lively sandwich program available for dine-in or takeout. Roman-style pizza, offered exclusively for lunch takeout, rounds out a menu designed for every kind of visit, from a quick bite to a leisurely dinner.

The restaurant’s striking interior, designed by acclaimed design studio Nivek Remas, reimagines the neighbourhood Italian restaurant through a contemporary architectural lens. Inspired by the rhythm of European cafés, wine bars, and social clubs, the space balances sophistication with warmth to create an environment that feels both elevated and effortlessly welcoming.
Upon entering, guests are greeted by sculptural cylindrical wine displays wrapped around the restaurant’s structural columns, transforming architectural necessities into defining design features. A long social bar anchors the dining room, while a mix of banquettes, communal tables, and intimate seating encourages conversation and connection. Rich walnut, dramatic marble, warm burnt-orange tones, textured upholstery, and layered lighting create a timeless setting that evolves throughout the day and into the evening.

The Flavours of the World cocktail menu will be available for a limited time from June 1
through July 19 across participating venues.
Bocado, the acclaimed culinary destination from Prince Edward County, is expanding to Georgian Bay, opening its doors to the public on Monday, December 15th, 2025. This new location brings Bocado’s signature seasonal and Spanish-inspired cuisine to Collingwood, offering a vibrant, intimate dining experience for locals, weekenders, and visitors exploring the region.
The Georgian Bay location is the result of a partnership between Executive Chef Stuart Cameron and INK Entertainment, with interior design by award-winning designers Nivek Remas. Drawing inspiration from Spanish Hacienda architecture, the space blends natural textures, inviting tones, and rustic-modern charm to create a relaxed, celebratory atmosphere perfect for après-ski, après-hike, or an evening out with friends and family.

Born in Melbourne, Australia, Stuart Cameron brings over 30 years of international hospitality experience, having shaped culinary programs for acclaimed restaurants such as Mira, Patria, Story’s Events, and Byblos across Toronto, Miami, and Dubai. His vision for Bocado merges the simplicity and freshness of traditional Spanish cuisine with imaginative, contemporary twists.

A refreshed, kitschy space that playfully nods to Italian mobster legends and the bold, glamorous world of mob wives. Plush banquettes, vintage art, and playful details channel the spirit of classic red sauce joints, while a standout mural is set to become the must-snap, photo-worthy moment of every visit. Executive Chef Marc explains the menu features hearty, comforting dishes rooted in Italian American tradition, made with love and served with a sense of fun and true hospitality.
· Honey Chinese (3rd Floor):
Designed by award-winning designers Nivek Remas, Honey Chinese unfolds like a forgotten film reel, moody, magnetic, and entirely transportive. Drawing inspiration from the golden age of 1960s Asian cinema, especially Wong Kar-wai’s In the Mood for Love, the space pairs velvet shadows and lacquered tables with oversized red lanterns glowing like stills frozen in time. Chef describes the menu as inspired by the nostalgic charm of Canadian-Chinese restaurants many grew up with, combining playful neon orange sauces, over-the-top décor, and even a fortune cookie or two. All delicious, fun, and a little tongue-in-cheek.
· Portland Room (2nd Floor):
A versatile and stylish event space, designed to host everything from private dinners and cocktail receptions to brand launches and special celebrations, all within a design-forward, King West aesthetic.
· Rodeo Dive (Main Floor, opening this fall):
Also designed by Nivek Remas, Rodeo Dive is a lively country sports bar that blends big-game energy with vintage Western accents and playful details. Warm, laid-back, and full of character, it’s designed to become the perfect gathering place for game days and casual nights out alike. There will also be a live component, with a small stage for performances and special events.
