Rooted in Tradition, Driven by Innovation
The legendary Saigon street food stall, immortalized by Anthony Bourdain’s acclaimed show No Reservations, will continue the legacy of Nguyen Thi Thanh, who was affectionately named “The Lunch Lady” by Bourdain himself. The Toronto location offers an elevated, soulful take on Vietnamese cuisine.
Chef Benedict Lim, with 20 years experience in the hospitality industry, oversees the culinary direction for the brand, while Chef de Cuisine Allan Lu leads the Toronto kitchen. With heavy hitters like Chotto Matte and Cactus Club Toronto under his belt, Lu blends his Vietnamese heritage with contemporary culinary precision. Under their collective leadership, the Toronto menu embraces what the team calls the 80/20 philosophy: 80% tradition, 20% creative expression. Together, they bring a balance of Vietnamese heritage and modern culinary sensibility, crafting a menu that honours tradition while still leaving space for reinterpretation. From the rotating soups inspired by Ms. Thanh’s original street cart to the street food influenced by Chef Lim’s travels in Saigon. Each dish invites guests into a world that’s nostalgic, bold, and uniquely personal. Signature dishes include the famed noodle soups, fan-favourite Steak Lúc Lắc—caramelized ribeye served with charred scallion butter— and interactive plates that reflect Vietnam’s rich and evolving culinary identity. These dishes are deeply rooted in Vietnam’s layered food history, from colonial-era creations like Bò Né and Bánh Mì Ốp La, to dishes shaped by the Vietnamese diaspora, where bold, comforting flavours like The Lunch Lady’s signature XO garlic noodles emerged as part of a vibrant Vietnamese-Western culinary movement. Unique to the Toronto menu is the Nui Xào Bò – Short Rib Rigatoni, their take on the comfort classic and an excellent showcase of their 80/20 philosophy; featuring tender beef short rib, spicy tomato demi-glace, rigatoni, and a slow-poached egg.

One of The Lunch Lady Toronto’s defining features will be its dual-concept approach, drawing inspiration from the bustling rhythm of Saigon’s streets. By day, the restaurant will channel the essence of Ms. Thanh’s famed lunch-only noodle stall, serving up delicious and unique daily soup specials. When evening falls, the concept transforms. Just as Ms. Thanh’s stall closes and her neighbouring vendors take over the night market, The Lunch Lady Toronto will transition to a dinner menu that pays tribute to the vibrant Saigonese street food culture that comes alive after dark. It’s two distinct culinary journeys, united under one roof by a shared reverence for Vietnamese culture.
A World-Class Cocktail Program Inspired by the Flavours of Vietnam
The Lunch Lady Toronto’s cocktail program puts a unique spin on classic drinks, blending traditional techniques with bold, unexpected flavours. From tamarind, pandan, and lychee to Vietnamese coffee and tropical fruits infused with phở spices, each cocktail reflects a deep connection to Vietnamese street culture. It’s a playful, boundary-pushing bar program designed to surprise and delight with every sip. Unique to this location, the wine list features a thoughtfully curated selection of Ontario-sourced wines, showcasing the best of the province’s vineyards. The Lunch Lady Toronto has also partnered with two of the city’s top craft breweries, Rainhard and Steadfast, to create exclusive beers on tap. The Rainhard x Lunch Lady Jasmine Rice Lager is crisp and aromatic, while the Steadfast x Lunch Lady Dragon Fruit Pale Ale offers a bright, tropical twist. Adding to the beverage offerings is a Vietnamese coffee program exclusive to this location, with standout creations like the Spiced Saigon Latte with coconut milk and star anise, pandan coconut cream-topped iced coffee, and a rich, peanut butter-infused cà phê sữa đá, each one a modern take on a beloved classic.
Street Soul and Storytelling: The Design of The Lunch Lady Toronto
The team at The Lunch Lady Toronto partnered with the award-winning design agency, SOLID Design Creative, helmed by Ian Rydberg and Shae-Lynn Mathers, to execute their vision of a space that embodies the vibrant urban culture of Vietnam, channelling its layered energy and authenticity into a richly immersive interior. From the onset, the vision was clear: to bring the dynamic Vietnamese street life indoors, reimagining the textures, rhythms, and spirit of its alleyways within the context of downtown Toronto. The space is a deliberate nod to the lived-in charm of Vietnam’s backstreet, where everyday life unfolds against a backdrop of hand-painted signage, accordion gates, lush greenery, and tactile materials. Custom-fabricated iron gates and archways anchor the space, while bespoke lighting installations, vintage-inspired awnings, and hand-painted signage contribute to the expressive character of a Southeast Asian streetscape. A curated material palette underscores the narrative, favouring honesty and warmth. Concrete floors feature hand-painted motifs inspired by Hanoi’s iconic stamped sidewalks, while a suspended canopy in a private dining room pays homage to the traditional cyclo bicycle taxi. The bar area references vernacular Vietnamese architecture, with a back wall and gantry that blend utilitarian design with subtle decorative elements, all bathed in a soft, golden glow.
The restaurant seats 140 guests across a variety of distinctive spaces, each capturing a unique aspect of Vietnamese culture. The Main Dining Room is the lively heart of the restaurant – warm, energetic, and communal. The front patio, with seating for 10, is inspired by Saigon’s open-air cafés, offering a relaxed street-side experience. The Nhậu Bar (13 seats) channels the spirit of Saigon’s late-night gatherings, while the Chef’s Counter (6 seats) offers an intimate front-row view of the kitchen in action. For more private experiences, the Rickshaw Lounge (10 guests) features curved booth seating under a hand-painted canopy, evoking the charm of Vietnam’s street-side eateries. The Saigon Supper Room, a fully private space for up to 20 guests, captures the vibrant energy of a Saigon night through rich textures and ambient lighting. A commissioned mirrored artwork offers a dreamlike “window” into daily life in Vietnam, rounding out an experience that goes beyond dining; it’s a cultural journey rooted in memory, storytelling, and sensory immersion.

She continues to visit the Vancouver location annually, and in a special visit from Vietnam, she’ll be in Toronto to celebrate the opening of the city’s first location, a milestone moment guided by her warmth, continued guidance, and the lasting legacy shaped in tandem with the late Chef Bourdain. Their influence is present in every detail, from the way they cook to the strong hospitality mindset that’s present in their every interaction, grounded in the Vietnamese saying “một nhà, một gia đình”: one house, one family. On Sunday, June 1, two of Toronto’s top culinary talents will collaborate for a one-night-only tasting dinner event at Park Hyatt Toronto. Set in the 17th-floor Terrace Room with sweeping skyline views, the event will feature an 8-course tasting menu presented by Executive chefs Ryusuke Nakagawa of Aburi Hana and Jonathan Williams of Park Hyatt Toronto. Only 30 seats are available. The evening will begin at 6:00 PM and include a welcome cocktail, canapés, curated wine pairings, and live music. The Aburi Hana and Park Hyatt Toronto collaboration between chef Ryusuke Nakagawa and chef Jonathan Williams is a first-of-its-kind dining experience between Park Hyatt Toronto, one of the city’s most iconic luxury hotels, and Aburi Hana, Toronto’s top MICHELIN-starred Japanese kaiseki destination. Marking the finale of Sakura Season, the dinner will highlight the refined techniques of chef Nakagawa, trained under a master chef to the Emperor of Japan, alongside the contemporary Canadian style of chef Williams, who is leading Park Hyatt Toronto’s culinary resurgence.
The evening begins with a welcome cocktail and canapés crafted in partnership with Roku Gin. Live music will accompany the dinner to round out the guest experience. The 8-course tasting menu will feature alternating dishes by chefs Nakagawa and Williams. Highlights include chef Nakagawa’s Lobster Kimiyaki with uni and chia seed soy and Maguro Flower Sashimi, paired with Chef Williams’ locally inspired creations such as Aged Duck and Mimosa Springs Trout. The dinner will conclude with a Miyazaki Mango dessert by Aburi Hana’s Executive Pastry chef Aiko Uchigoshi, whose award-winning pastry expertise spans more than 15 years.

Fans are getting a first look at Marvel Television’s “Ironheart” today with the debut of a teaser trailer and poster. Launching exclusively on Disney+ on June 24, 2025 the intriguing new series stars Dominique Thorne as Riri Williams, a young, genius inventor whose iron suits rival the best in the MCU. The character made her debut in 2022’s “Black Panther: Wakanda Forever,” directed by Ryan Coogler. “Ironheart is such a great character in publishing,” said Coogler. “In 2016, Brian Michael Bendis created a character who would be a successor of sorts to the Iron Man legacy. In the comic book, Riri Williams and Tony Stark had a relationship—she was a student at MIT who came from an almost polar opposite background as Tony, but they came together in their passion to better society. Eventually, the character gets her own identity as Ironheart, and other writers like Eve Ewing picked up from there, taking Riri Williams to Chicago.”
Set after the events of “Black Panther: Wakanda Forever,” “Ironheart” pits technology against magic when Riri—determined to make her mark on the world—returns to her hometown of Chicago. Jacob Lewis is an offshore oil and gas construction worker from Butlerville, Newfoundland, who had dreamed of becoming a full-time singer. Shania Twain selected Lewis as her Golden Buzzer in the auditions following his performance of “Bed of Roses” by Bon Jovi.
